So was wondering how to enable touch typing have looked through settings and am unable to find it.

Go in to any edit field and change the rotor setting until it says "typing mode". Then you can swipe up or down to cycle between standard and touch typing modes.

And if you don't know how to use the roader (as I didn't for a long time) you take two fingers, and just gently sort of twist them as if you were turning a small dial.
If you want to practice gestures like the rotor, you can do this in voiceover practice, which can be found in settings, general, accessibility, voiceover.
Though it's probably a better idea to find a tutorial of sorts. The gestures practice is great to get them down, but knowing what to do? Unless I have no idea what I'm doing, practice doesn't tell you anything beyond what you yourself input.
No, but it does give you an environment with which to practice these newly learned gestures without worrying about how they might affect the functionality of your device. of course, you'd really have to screw up badly to cause any real damage to an iDevice, but it's still nice, as a newbie, to feel secure that you can take all the time you need to perform the gestures correctly without the worry of what might happen if you get it wrong.
